English muffins, we became acquainted with first time on our favorite breakfast place Frenchie in Paris.
Possibly, we have eaten the English Muffins baked on a frying pan several times before then, but it was there we got an eye for them and found out how they stood out from the other buns baked in the oven.
English Muffins are delicious and crispy on both sides since they are baked in a frying pan while they are soft on the whole Middle piece. You cut them actually not over with a knife, but the dots just with a fork around the edges, and then easily broken apart.
• 2 dl milk
• 15 g yeast
• 1 tbsp sugar
• 40 g melted butter
• 175 g wheat flour
• 75 g whole grain wheat
• 1/2 tsp salt

How to make
I cold elevate this batter for English Muffins overnight, because it is so convenient and easy for the next day and as it often is a bun that is included as an accessory to a morgenmadsret, so we just salvage over jumps in the morning. I only take the Bowl out of the fridge as soon as I wake up, so can the equal tempering before I begin to cook breakfast.
Warm the milk to 35 degrees and stir yeast and sugar into a bowl with the warm milk. Add the butter, salt, and flour, and stir then wheat flour in a little at a time, until dough is smooth and delicious. Set the dough in the refrigerator covered with a film or a clean cloth until the next morning.
Take the dough out and let it stand on the kitchen table in the bowl in half an hour. I use a sets out to tap 7 buns out, so, therefore, I come to a little coarse flour at borden and press dough out with a rolling pin until it is about 1 cm in height, at which point I protrude 7 buns out. But you can also easily just parts dough in 7 or 8 equal parts and shape some spherical buns, which then right gets a pressure so they are flat and about 1 cm high.
Behind the dough balls on a frying pan at medium heat for approximately 10-15 minutes on each side. If there is doubt they have had enough, so they can just bake finished in the oven at 175 degrees for 5-8 minutes.
Dough balls are used for an e.g. recipe for Egg Benedict which was on the blog earlier today, but also to a simple English Muffin with egg and bacon at Breakfast, Egg Florentine or just as a nice good morning muffin that tastes still with all kinds of delicious stuffing – also butter, cheese, and jam.
